Theo Welcomes Paul Green
For one night only, Paul Green, Head Chef of The Three Chimneys on Skye, will join Links House Head Chef Theo Creton in Dornoch to create a collaborative eight-course dinner.
The Three Chimneys draws on Skye’s seafood, local producers and landscape, while MARA at Links House shares a commitment to seasonal Scottish ingredients and allowing their flavours to lead. This gives Theo and Paul common ground, with room for each chef’s personality to come through.
The dinner will feature an eight-course tasting menu for £130 per person, with four courses from Theo and four from Paul. Canapés, bread and petits fours will each feature an element from both chefs, with the bread served alongside Links House butter and oil.
“I’m really excited to work with Paul to showcase the quality and diversity of the Scottish larder,” says Theo. “Skye is renowned for its incredible shellfish, while here in the Highlands we have access to exceptional game. Bringing those together gives us a great starting point to celebrate the produce that surrounds us and see how our different styles approach it.”
Guests will dine at two shared tables, one in MARA and one in The Anteroom, where Theo and Paul will personally introduce their dishes in both spaces.
An optional wine pairing will be available for £80. Due to the nature of this collaborative menu, dietary requirements, allergies and menu preferences cannot be accommodated.
